- 2 cups cottage cheese (small-curd recommended)
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest (about 1 lemon)
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional toppings: fresh berries (strawberries, blueberries, raspberries), extra lemon zest, crushed pistachios or almonds, light dusting of powdered sugar
Instructions
- Gather all ingredients and equipment.
- Wash and dry your lemon, measure out cottage cheese, honey, and vanilla.
- Zest the lemon using a microplane, avoiding the bitter white pith.
- Juice the lemon and strain out seeds.
- Add cottage cheese to a blender and blend on high for 1-2 minutes until smooth.
- Add lemon juice, lemon zest, honey, vanilla extract, and salt, then blend again for 30-60 seconds until glossy.
- Taste and adjust sweetness or zest as needed.
- Pour pudding into serving bowls and chill for 30 minutes if desired.
- Serve cold, topped with berries or nuts.
Notes
Blending well gives a smooth texture. Adjusting sweetness before chilling ensures a balanced flavor. Store in the fridge for up to 4 days.
