Description

Delicious Homemade Chicken Quesadillas, perfect for quick dinners or snacks, featuring crispy tortillas, gooey cheese, and flavorful salsa chicken.

Ingredients

Scale
  • 2 cups cooked salsa chicken
  • 1 cup refried beans
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 small flour tortillas
  • 1 tablespoon olive oil
  • Sour cream and salsa for serving (optional)

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Spread refried beans on half of each tortilla, then add salsa chicken and sprinkle with cheese.
  3. Fold the tortillas over to create a half-moon shape.
  4. Cook quesadillas in the skillet for 2-3 minutes on each side until golden and cheese is melted.
  5. Remove from skillet, let rest briefly, and cut into wedges.
  6. Serve warm with sour cream and salsa.

Notes

For best results, do not overstuff the quesadillas and ensure the skillet is preheated for optimal crispiness.
