Ingredients

  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2/3 cup water
  • Cornstarch for dusting

Instructions

  1. In a large bowl, combine the flour, salt, and baking soda. Whisk until well mixed.
  2. Slowly pour in the water while stirring continuously until the dough starts forming.
  3. Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
  4. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  5. Roll the rested dough as thin as possible on a floured surface.
  6. Slice the rolled dough into thin strips, resembling traditional ramen thickness.
  7. Dust the noodles lightly with cornstarch to prevent sticking.
  8. Bring a large pot of water to a rolling boil, then add the fresh noodles and cook for 3-4 minutes.
  9. Drain and rinse the noodles under cold water to stop the cooking process.
