- 1 cup cornmeal
- 1 cup all-purpose flour

- 1 tablespoon baking powder

- 1/2 cup butter, melted
- 1/4 cup honey
- 1 cup buttermilk
- 2 eggs
Instructions
- Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together melted butter, honey, buttermilk, and eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the greased muffin tin, filling each cup about three-quarters full.
- Bake for 12 to 15 minutes until a toothpick comes out clean.
- Allow to cool slightly before serving.
Notes
For a gluten-free option, use gluten-free cornmeal mix. You can also experiment with whole wheat flour.
