Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1/4 cup honey
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together melted butter, honey, buttermilk, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the greased muffin tin, filling each cup about three-quarters full.
  6. Bake for 12 to 15 minutes until a toothpick comes out clean.
  7. Allow to cool slightly before serving.

Notes

For a gluten-free option, use gluten-free cornmeal mix. You can also experiment with whole wheat flour.
