A bold and flavorful Instant Pot seafood boil featuring shrimp, crab legs, sausage, corn, and potatoes, seasoned with Old Bay and garlic butter. Perfect for family dinners or seafood lovers craving a quick and satisfying one-pot meal.
Ingredients
1 lb large raw shrimp (shell-on or peeled)
1 lb crab legs (snow or Dungeness)
12 oz smoked sausage, sliced
2 ears corn, cut into thirds
1 lb red potatoes, halved or quartered
1.5 cups chicken broth or seafood stock
Juice of 1 lemon
2 tsp Old Bay seasoning
1 tsp Cajun seasoning (optional)
1 tsp garlic powder or 3 garlic cloves, minced
3 tbsp unsalted butter (for finishing)
1 tbsp chopped parsley (optional garnish)
Instructions

Prep Ingredients: Wash and cut all ingredients. Keep seafood refrigerated until ready to cook.

Layer Stage One: In the Instant Pot, add potatoes, corn, sausage, broth, lemon juice, garlic, and half the seasoning. Stir gently.

Pressure Cook Stage One: Seal the lid and cook on high pressure for 5 minutes. Perform a quick release.

Add Seafood: Open the lid, add shrimp and crab legs on top. Sprinkle with remaining seasoning.

Pressure Cook Stage Two: Cook on high pressure for 1 more minute. Quick release immediately after.

Finish & Serve: In a small pan, melt butter with garlic and pour over the seafood. Garnish with parsley if desired and serve hot with lemon wedges.
Notes
Always quick release after cooking seafood to prevent overcooking.
You can substitute sausage with turkey or plant-based options.
To make it spicier, add a few dashes of hot sauce or more Cajun seasoning.
Avoid overfilling your Instant Pot. If needed, split into two batches.
Best served immediately, but leftovers can be refrigerated up to 2 days.
