Description

Quick and easy warm, cheesy snack bites using tortilla chips filled with a creamy cheese mix.


Ingredients

Scale
  • 10 oz Tostitos Scoops tortilla chips
  • 8 oz cream cheese, softened
  • 8 oz shredded mozzarella cheese
  • 1 large egg
  • 15 oz sweet corn, drained
  • 4 oz green chiles, mild or medium
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Arrange the tortilla chips on the baking sheet, cup side up.
  3. In a large bowl, mix the cream cheese, shredded mozzarella, egg, sweet corn, green chiles, garlic powder, salt, and pepper until smooth.
  4. Spoon 1 tablespoon of the mixture into each chip cup.
  5. Sprinkle Parmesan cheese on top of each filled chip.
  6. Bake for 13-15 minutes until the cheese is bubbling and golden.
  7. Let cool slightly and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
