- 2 cups Chilled Mashed Potatoes
- 1 cup Cheese (e.g., Cheddar)
- 1 cup Breadcrumbs
- 1 large Egg
- to taste Spices (e.g., salt, pepper)
- 1 cup Finely Chopped Vegetables (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine chilled mashed potatoes and grated cheese.
- Add egg and season with salt, pepper, and desired spices.
- If using, fold in chopped vegetables.
- Sprinkle breadcrumbs and mix until a scoopable mixture forms.
- Shape mixture into small rounds and roll in additional breadcrumbs.
- Place on the prepared baking sheet and bake for 20–25 minutes, flipping halfway through.
- Serve warm, optionally with dips.
Notes
Chill the mashed potatoes beforehand for easier shaping. They can also be pan-fried for a richer crust.
