Description

Warm, golden, and loaded with melty cheese, these little puffs are a comforting snack that turns leftover mashed potatoes into something festive and snackable.


Ingredients

Scale
  • 2 cups Chilled Mashed Potatoes
  • 1 cup Cheese (e.g., Cheddar)
  • 1 cup Breadcrumbs
  • 1 large Egg
  • to taste Spices (e.g., salt, pepper)
  • 1 cup Finely Chopped Vegetables (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine chilled mashed potatoes and grated cheese.
  3. Add egg and season with salt, pepper, and desired spices.
  4. If using, fold in chopped vegetables.
  5. Sprinkle breadcrumbs and mix until a scoopable mixture forms.
  6. Shape mixture into small rounds and roll in additional breadcrumbs.
  7. Place on the prepared baking sheet and bake for 20–25 minutes, flipping halfway through.
  8. Serve warm, optionally with dips.

Notes

Chill the mashed potatoes beforehand for easier shaping. They can also be pan-fried for a richer crust.
