Description

A fast and flavorful skillet meal of shrimp and asparagus with tangy lemon and garlic.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Red pepper flakes, optional for heat

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Cook shrimp in the skillet, seasoning with salt, pepper, and red pepper flakes if using, until pink, about 3-4 minutes.
  4. Add asparagus and lemon juice, tossing to combine, and cook for an additional 3-4 minutes, or until asparagus is tender but still crisp.
  5. Remove from heat, stir in lemon zest, and serve immediately.

Notes

Keep to medium heat to avoid burning garlic. Shrimp should be opaque and slightly firm. Asparagus should be crisp-tender.
