Description

Delight in these zesty and fluffy lemon rolls, perfect for any occasion with a sweet and tangy icing.


Ingredients

  • 4 1/4 cups all-purpose flour
  • 4 1/2 tsp instant dry yeast
  • 1 Tbsp + 1 tsp poppy seeds (optional)
  • 1 tsp fine salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 4 Tbsp fresh lemon zest
  • 1/2 cup packed light brown sugar
  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 2 Tbsp unsalted butter, melted

Instructions

  1. In a bowl, combine 4 1/4 cups of flour, yeast, salt, and poppy seeds.
  2. Warm buttermilk and whisk in granulated sugar and butter.
  3. Add eggs and lemon zest to the buttermilk mixture and combine.
  4. Gradually mix in the flour mixture until a soft dough forms.
  5. Knead dough for 5-7 minutes until smooth and elastic.
  6. Place in a greased bowl, cover, and let rise for about 1 hour.
  7. Prepare filling by mixing light brown sugar, granulated sugar, softened butter, and lemon zest.
  8. Roll out dough into a rectangle and spread lemon filling over the surface.
  9. Roll dough into a tight log and cut into 1-inch pieces using dental floss.
  10. Place rolls in a greased 9×13-inch pan and rise for another 30-40 minutes.
  11. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  12. Mix powdered sugar, lemon juice, and melted butter for icing.
  13. Drizzle or spread icing over cooled rolls before serving.

Notes

For a delightful twist, try adding fresh blueberries or lavender to the filling.
