- 2 medium Honeycrisp or Granny Smith apples, cored and sliced (about 2 cups)
- 4 medium carrots, peeled and chopped (about 2 cups)
- 3 tbsp Dijon mustard
- 4 tbsp pure maple syrup
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together Dijon mustard, maple syrup, olive oil, salt, and pepper until smooth.
- Toss in the chopped apples and carrots until evenly coated.
- Spread the mixture onto a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through, until golden brown and tender.
- Serve warm as a delicious side dish.
Notes
For a nutty crunch, add pecans or walnuts before roasting. This dish can be prepared ahead of time and stores well for leftovers.
