Description

A delightful side dish combining sweet roasted apples and savory carrots, glazed with maple syrup and Dijon mustard.


Ingredients

  • 2 medium Honeycrisp or Granny Smith apples, cored and sliced (about 2 cups)
  • 4 medium carrots, peeled and chopped (about 2 cups)
  • 3 tbsp Dijon mustard
  • 4 tbsp pure maple syrup
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together Dijon mustard, maple syrup, olive oil, salt, and pepper until smooth.
  3. Toss in the chopped apples and carrots until evenly coated.
  4. Spread the mixture onto a parchment-lined baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until golden brown and tender.
  6. Serve warm as a delicious side dish.

Notes

For a nutty crunch, add pecans or walnuts before roasting. This dish can be prepared ahead of time and stores well for leftovers.
