- 6 hard-boiled eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Paprika for garnish
- Chopped chives for garnish
Instructions
- Slice the hard-boiled eggs in half lengthwise.
- Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork and add mayonnaise, Dijon mustard, white vinegar, garlic powder, onion powder, salt, and pepper.
- Mix until creamy and smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika and chopped chives before serving.
Notes
Slice eggs cleanly to make neat halves. Taste the filling before filling the whites and add more vinegar or salt if needed.
