Description

Quick and refreshing mini fruit pizza cookies topped with cream cheese frosting and fresh fruit, perfect for parties and snack time.


Ingredients

  • 1 package sugar cookie dough
  • 5 tablespoons unsalted butter, softened to room temperature
  • 8 ounces cream cheese, softened to room temperature
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Diced mixed fruit (kiwis, blackberries, strawberries, raspberries, blueberries)


Instructions

  1. Preheat your oven and bake the sugar cookies according to the package instructions.
  2. Transfer the cookies onto a wire rack to cool completely.
  3. Prepare the frosting by beating the softened butter and cream cheese together until smooth and creamy.
  4. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  5. Spread the frosting evenly across the top of each cooled cookie.
  6. Top with a generous amount of diced mixed fruit and press lightly.
  7. Serve immediately or chill in the refrigerator until ready to serve.
