Description

Delicious and healthy Mint Chocolate Chip Protein Balls, perfect as a snack or post-workout treat.


Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly.
  2. If the mixture is too dry, add almond milk one tablespoon at a time until the desired consistency is reached.
  3. Gently fold in the mini dark chocolate chips.
  4. Scoop about one tablespoon of the mixture and roll it into a ball. Repeat until all mixture is rolled out.
  5. Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
