Instructions
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, combine rolled oats, grated carrots, and grated apples.
- In another bowl, whisk together all-purpose flour, sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, mix vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
Preheating gives an even rise. Mix the wet into the dry only until combined to keep the cake tender. Greasing the pan helps the cake release cleanly.
