- 8 oz pasta (linguine or fettuccine)
- 2 tbsp olive oil
- 2 salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil the pasta in salted water according to package instructions; drain and set aside.
- Heat olive oil in a skillet over medium heat, add salmon, and cook for 4-5 minutes on each side until opaque and flaky. Remove and flake into bite-sized pieces.
- In the same skillet, sauté garlic for 1 minute until fragrant, then add spinach and tomatoes, cooking until wilted.
- Pour in heavy cream, bring to a simmer, and stir in Parmesan until smooth.
- Return pasta and salmon to the skillet, tossing to coat in the sauce. Heat through for 1 minute.
- Garnish with fresh parsley and serve immediately.
Notes
Taste and adjust salt and pepper before serving. A squeeze of lemon can enhance flavor.
