- ⅓ cup + 1 tablespoon granulated sugar
- 1 tablespoon cornstarch
- ¼ teaspoon salt
- 1 stick unsalted butter (cold, cut into ½-inch cubes)
- ¼ cup fresh cranberries (finely chopped)
- ½ tablespoon orange zest
- 2/3 cup powdered sugar
- 3 teaspoons orange juice
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, granulated sugar, cornstarch, and salt until combined.
- Add cold cubed butter to the mixture and mix until it resembles coarse crumbs.
- Fold in finely chopped cranberries and orange zest.
- Shape the dough into a log about 2 inches in diameter, wrap in plastic wrap, and chill for at least 30 minutes.
- Slice the log into rounds about ½ inch thick and place on the prepared baking sheet.
- Bake for 12-15 minutes until the edges turn light golden brown.
- For the glaze, whisk together powdered sugar and orange juice until smooth, then drizzle over cooled cookies.
