Ingredients
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 large egg
2 tbsp melted butter
1/2 tsp vanilla extract
Sweet or savory fillings of choice (berries, yogurt, bacon, eggs, etc.)
Instructions
1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
2. In a separate bowl, combine buttermilk, egg, melted butter, and vanilla.
3. Pour wet ingredients into the dry mixture and stir gently until combined.
4. Preheat a non-stick pan over medium heat and lightly grease with butter or oil.
5. Scoop 1/4 cup batter for each pancake and cook until golden on both sides.
6. Cool slightly, then fold pancakes into taco shapes using a muffin tin or bowl.
7. Fill with desired sweet or savory ingredients and serve immediately.
Notes
Make pancake shells ahead and refrigerate or freeze.
