Description

Delightful holiday cookies featuring vibrant red and white swirls with a refreshing peppermint flavor.


Ingredients

  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies for coating

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt until combined; set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  3. Gradually add the dry flour mixture to the wet ingredients. Mix on low speed until just combined.
  4. Divide the dough in half. Leave one half plain and color the other half with red gel food coloring until uniform.
  5. Wrap each ball of dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Roll out the plain dough into a rectangle, then do the same with the red dough. Layer the red dough on top of the plain dough and roll tightly into a log.
  7. Wrap the dough log in plastic wrap and chill for at least 2 hours until very firm.
  8. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  9. Remove the log from the refrigerator, brush lightly with water or egg white, and roll in coarse sugar or crushed peppermint candies.
  10. Slice the log into 1/4 inch thick rounds and place on prepared baking sheets.
  11. Bake for 8 to 10 minutes, until edges are lightly golden. Cool on baking sheets for a few moments before transferring to a wire rack to cool completely.

Notes

Chill the dough for better handling and swirls. Avoid overmixing to prevent tough cookies.
