Description

A quick and easy one-pan meal featuring tender chicken, sweet pineapple, and cooked rice, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, cut into bite-size pieces
  • 1 cup pineapple chunks
  • 2 cups cooked rice
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and bell pepper, cooking until softened.
  3. Add the chicken and cook until browned.
  4. Stir in pineapple chunks and soy sauce, cooking for a few more minutes.
  5. Add the cooked rice and mix thoroughly.
  6. Season with salt and pepper.
  7. Garnish with green onions and serve.

Notes

Heat the pan before adding oil to prevent sticking. Brown the chicken for better texture. Warm the pineapple with soy sauce for a light glaze.
