- 1 cup pineapple chunks
- 2 cups cooked rice
- 1 tablespoon soy sauce

- 1 bell pepper, chopped
- 1 onion, chopped

- Green onions for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and bell pepper, cooking until softened.
- Add the chicken and cook until browned.
- Stir in pineapple chunks and soy sauce, cooking for a few more minutes.
- Add the cooked rice and mix thoroughly.
- Season with salt and pepper.
- Garnish with green onions and serve.
Notes
Heat the pan before adding oil to prevent sticking. Brown the chicken for better texture. Warm the pineapple with soy sauce for a light glaze.
