Description

Delicious and visually appealing bars with a soft chocolate cake base topped with a sweet pink coconut layer. Perfect for parties and easy to make ahead.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/4 cup pink food coloring
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla.
  5. Gradually mix in the dry ingredients.
  6. Spread the batter into the prepared pan and bake for 25-30 minutes.
  7. Allow to cool.
  8. Mix shredded coconut with pink food coloring and powdered sugar in a separate bowl.
  9. Once the cake is cooled, spread the pink coconut mixture on top.
  10. Cut into bars and serve.

Notes

Serve at room temperature or warm briefly in the microwave. Store in an airtight container for up to 2 days or in the fridge for up to 1 week.
