- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup fresh strawberries, pureed
- ½ cup raspberry sauce (store-bought or homemade)
- Whipped cream, for serving
- Fresh mint leaves, for garnish
- Sparkling wine or sparkling cider
- A splash of orange juice
Instructions
- In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, and melted butter until smooth, then fold in the strawberry puree.
- Gradually pour the wet mixture into the dry ingredients and stir until just combined without overmixing.
- Heat a skillet and coat with butter or oil. Pour ¼ cup of batter for each pancake.
- Cook until edges are golden and bubbles form, then flip and cook for another minute.
- Stack pancakes on a platter, drizzle with raspberry sauce, add whipped cream, and garnish with mint leaves.
Notes
Don’t overmix the batter for fluffier pancakes; if you have leftovers, store pancakes in an airtight container for up to 3 days in the fridge or freeze them for about a month.
