Description

A vibrant and festive brunch perfect for celebrating friendship with delicious strawberry pancakes and mimosas.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • A pinch of salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup fresh strawberries, pureed
  • ½ cup raspberry sauce (store-bought or homemade)
  • Whipped cream, for serving
  • Fresh mint leaves, for garnish
  • Sparkling wine or sparkling cider
  • A splash of orange juice

Instructions

  1. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and melted butter until smooth, then fold in the strawberry puree.
  3. Gradually pour the wet mixture into the dry ingredients and stir until just combined without overmixing.
  4. Heat a skillet and coat with butter or oil. Pour ¼ cup of batter for each pancake.
  5. Cook until edges are golden and bubbles form, then flip and cook for another minute.
  6. Stack pancakes on a platter, drizzle with raspberry sauce, add whipped cream, and garnish with mint leaves.

Notes

Don’t overmix the batter for fluffier pancakes; if you have leftovers, store pancakes in an airtight container for up to 3 days in the fridge or freeze them for about a month.
