- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pistachios
- 1 cup chocolate chunks
- 1 cup pistachio cream
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped pistachios and chocolate chunks.
- Scoop tablespoon-sized amounts of dough, create an indentation, and add pistachio cream before sealing into a ball.
- Place the cookies on a lined baking sheet and bake for 12-15 minutes until edges are lightly golden.
- Allow to cool on the baking sheet before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and do not overbake the cookies.
