Description

Delightfully soft and chewy cookies with a creamy pistachio center, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • 1 cup chocolate chunks
  • 1 cup pistachio cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped pistachios and chocolate chunks.
  7. Scoop tablespoon-sized amounts of dough, create an indentation, and add pistachio cream before sealing into a ball.
  8. Place the cookies on a lined baking sheet and bake for 12-15 minutes until edges are lightly golden.
  9. Allow to cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and do not overbake the cookies.
