Description

A quick and easy home-style dish of cooked rice, chicken, and vegetables with a mild soy and sesame flavor.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and cook for 2-3 minutes until they are tender.
  3. Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked.
  4. Add the cooked rice and diced chicken to the skillet.
  5. Pour soy sauce over the mixture and stir well, combining all ingredients.
  6. Add green onions, salt, and pepper to taste.
  7. Stir everything together and cook for another 2-3 minutes.
  8. Serve hot.

Notes

For a richer taste, add a little more sesame oil at the end. Leftovers can be stored in an airtight container for 3-4 days in the fridge.
