- 3 tablespoons white miso paste
- 2 tablespoons brown sugar
- 2 teaspoons rice vinegar
- 2 tablespoons softened butter
- ¼ teaspoon red pepper flakes
- ¼ teaspoon ground ginger (or 1 teaspoon freshly grated)
- ¼ teaspoon black pepper
- 1 ½ lb boneless skinless chicken thighs
- Green onions, for serving (optional)
Instructions
- Preheat the oven to 425°F.
- Line a large rimmed baking sheet with a silicone mat, parchment paper, or foil.
- In a small bowl, smash together miso paste, brown sugar, rice vinegar, butter, red pepper flakes, ground ginger, and black pepper.
- Pat chicken thighs dry with a paper towel and trim any excess fat.
- Place chicken thighs on the baking sheet and dollop the miso mixture onto each thigh, spreading it evenly.
- Bake for 25 minutes, or until the miso is caramelized and darkened in color, reapplying melted glaze if necessary.
- Let the thighs rest for a few minutes before serving.
Notes
Patting the thighs dry before glazing helps with caramelization. Ensure there’s space between the thighs on the baking sheet for even cooking.
