Quick and satisfying ground turkey lettuce wraps that can be customized with various sauces and toppings, perfect for busy weeknights.

- 1 lb ground turkey (lean, 85% recommended)
- 1 head butter lettuce or romaine hearts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce or tamari
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1–2 tbsp chili garlic sauce or sriracha (to taste)
- 1 cup water chestnuts, chopped (optional)
- 2 green onions, chopped
- Chopped peanuts for topping (optional)
Instructions
- Heat a large skillet over medium-high heat. If using very lean turkey, add a little oil.
- Crumble the turkey into the pan, allowing it to sit for a minute before stirring for browning.
- Cook until the turkey is no longer pink. If there’s liquid in the pan, push the turkey to the side to let it simmer off.
- Add the diced onion and cook until softened, then stir in garlic and ginger for 1 minute.
- Pour in the pre-mixed sauce (soy sauce, hoisin, rice vinegar, sesame oil, and chili sauce) and let it bubble for 2-3 minutes until slightly thickened.
- Fold in the chopped water chestnuts and green onions.
- Taste and adjust seasoning. Spoon the filling into cold lettuce cups and add toppings as desired.
Notes
For best results, keep lettuce cold and dry. Pre-mix sauce before cooking for quicker preparation.
