Description

A delicious frittata made with leftover spaghetti, eggs, and cheese, perfect for quick weeknight meals.


Ingredients

  • 2 cups leftover spaghetti
  • 1 large onion, sliced
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • Fresh herbs, such as parsley or basil, chopped
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook until caramelized, about 10-15 minutes.
  2. Whisk together the eggs, Parmesan cheese, fresh herbs, salt, and pepper in a bowl.
  3. Add the leftover spaghetti to the caramelized onions in the skillet and mix well.
  4. Pour the egg mixture over the spaghetti and onions, spreading it evenly. Cook on medium heat until the edges begin to set, about 5 minutes.
  5. Preheat the broiler. Once the edges are set, transfer the skillet to the broiler for 3-5 minutes, or until the top is golden and cooked through.
  6. Remove from the oven, let cool slightly, slice, and serve warm.

Notes

Let the onions brown slowly for better flavor. Stir the pasta into the onions so the eggs reach all strands. Broil for a short time to avoid drying the frittata.
