Description

A warm and comforting Tuscan soup made with white beans, kale, and fragrant herbs, perfect for chilly days.


Ingredients

Scale
  • 2 cups white beans (canned or cooked)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Gluten-free bread for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the diced onion and minced garlic, sauté until soft and translucent.
  3. Stir in the dried thyme and smoked paprika, cooking for about a minute.
  4. Add the white beans, vegetable broth, and diced tomatoes, stir and bring to a boil.
  5. Once boiling, reduce heat and let it simmer for 15 to 20 minutes.
  6. Add the chopped kale and cook for an additional 5 to 10 minutes until tender.
  7. Season with salt and pepper to taste, then serve with gluten-free bread.

Notes

For a creamier soup, consider blending a portion of it or adding a splash of coconut milk.
