Ingredients

- 2 cups white beans (canned or cooked)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups kale, chopped
- 1 can diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Gluten-free bread for serving
Instructions
- Heat the olive oil in a large pot over medium heat until shimmering.
- Add the diced onion and minced garlic, sauté until soft and translucent.
- Stir in the dried thyme and smoked paprika, cooking for about a minute.
- Add the white beans, vegetable broth, and diced tomatoes, stir and bring to a boil.
- Once boiling, reduce heat and let it simmer for 15 to 20 minutes.
- Add the chopped kale and cook for an additional 5 to 10 minutes until tender.
- Season with salt and pepper to taste, then serve with gluten-free bread.
Notes
For a creamier soup, consider blending a portion of it or adding a splash of coconut milk.
