Description

A comforting slow cooker dish featuring tender chicken breasts cooked in a lemon-herb broth, served with fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • Chopped parsley for garnish

Instructions

  1. In the slow cooker, mix lemon juice and zest with minced garlic, chopped rosemary, chopped thyme, olive oil, and a pinch of salt and pepper.
  2. Nestle the chicken breasts into the slow cooker and coat them with the lemon-herb mixture.
  3. Pour the chicken broth over the chicken, ensuring it is partly submerged.
  4. Cover and cook on low for 4–6 hours until the chicken is tender.
  5. About 30 minutes before serving, add the rice around the chicken and stir gently to combine.
  6. Once the rice is tender, fluff it with a fork and serve garnished with chopped parsley.

Notes

For extra texture, sear the chicken after cooking for a golden finish. Store leftovers in airtight containers for 3-4 days or freeze for up to 2 months.
