- 4 boneless, skinless chicken breasts
- 2 lemons (juiced and zested)
- 4 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- 1 teaspoon olive oil
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup long-grain rice
- Chopped parsley for garnish
Instructions
- In the slow cooker, mix lemon juice and zest with minced garlic, chopped rosemary, chopped thyme, olive oil, and a pinch of salt and pepper.
- Nestle the chicken breasts into the slow cooker and coat them with the lemon-herb mixture.
- Pour the chicken broth over the chicken, ensuring it is partly submerged.
- Cover and cook on low for 4–6 hours until the chicken is tender.
- About 30 minutes before serving, add the rice around the chicken and stir gently to combine.
- Once the rice is tender, fluff it with a fork and serve garnished with chopped parsley.
Notes
For extra texture, sear the chicken after cooking for a golden finish. Store leftovers in airtight containers for 3-4 days or freeze for up to 2 months.
