Description

Quick and simple pancakes made with ripe bananas and oats, perfect for a busy morning.


Ingredients

Scale
  • 1 ripe banana
  • 1 cup oats
  • 1 cup milk (or dairy-free alternative)
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch of salt
  • oil or butter for cooking

Instructions

  1. Mash the banana until mostly smooth.
  2. Add oats, milk, egg, baking powder, vanilla extract, and salt, mix well to combine.
  3. Heat a non-stick skillet over medium heat and add a little oil or butter.
  4. Pour a ladle of the pancake batter into the skillet.
  5. Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 1-2 minutes.
  6. Repeat with the remaining batter.
  7. Serve warm with your favorite toppings like syrup, fresh fruit, or yogurt.

Notes

Use rolled oats for better texture. Quick oats can be used for a smoother batter. Serve warm and experiment with various toppings.
