Instructions
- Whisk together flour, sugar, baking powder, and salt in a large mixing bowl.
- In a separate bowl, mix together milk, egg, melted butter, and vanilla extract until well blended.
- Pour wet ingredients into dry ingredients and stir until just combined, being careful not to overmix.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Remove pancakes from skillet and sprinkle with cinnamon sugar immediately.
