Ingredients

  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions
  • Crumbled bacon (optional)


Instructions

  1. Sauté the onion, garlic, bell pepper, and celery over medium heat for about 5 minutes until softened.
  2. Add the diced potatoes, Cajun seasoning, smoked paprika, and broth.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth, leaving some chunks for texture.
  5. Stir in the heavy cream and heat through for an additional 5 minutes.
  6. Serve hot, garnished with green onions and crumbled bacon if desired.

Notes

For a vegetarian version, use vegetable broth. Heavy cream can be replaced with half-and-half for a lighter finish. Adjust Cajun seasoning to taste for preferred heat level.
