Description

A comforting bowl of Spicy Miso Ramen that blends rich umami flavors with a hint of spice, perfect for chilly evenings.


Ingredients

  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 200g ramen noodles
  • 1 cup shiitake mushrooms, sliced
  • 1 cup corn (fresh or canned)
  • 2 green onions, chopped
  • 1 tablespoon chili paste (optional)
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pot over medium heat.
  2. Add sliced shiitake mushrooms and sauté until softened and golden.
  3. Pour in vegetable broth, miso paste, and soy sauce; stir in chili paste if desired.
  4. Bring to a simmer.
  5. Add ramen noodles and cook according to package instructions, about 4-5 minutes.
  6. Stir in corn and warm through for about a minute.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve hot, garnished with chopped green onions.

Notes

Don’t overcook the noodles; they should be al dente as they will continue cooking in the broth. Adjust the spice level to your preference.
