- 4 cups vegetable broth
- 3 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 200g ramen noodles
- 1 cup shiitake mushrooms, sliced
- 1 cup corn (fresh or canned)
- 2 green onions, chopped
- 1 tablespoon chili paste (optional)
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pot over medium heat.
- Add sliced shiitake mushrooms and sauté until softened and golden.
- Pour in vegetable broth, miso paste, and soy sauce; stir in chili paste if desired.
- Bring to a simmer.
- Add ramen noodles and cook according to package instructions, about 4-5 minutes.
- Stir in corn and warm through for about a minute.
- Taste and adjust seasoning with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
Don’t overcook the noodles; they should be al dente as they will continue cooking in the broth. Adjust the spice level to your preference.
