Ingredients

- 1 bag frozen chopped spinach (10 oz) – thawed and squeezed dry
- 1 block cream cheese (8 oz) – softened to room temperature
- 1/2 cup grated Parmesan
- 1/4 cup mayo
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch red pepper flakes (optional)
- 1 sheet puff pastry – thawed but still cold
- 1 egg – for brushing
Instructions
- In a mixing bowl, combine softened cream cheese, grated Parmesan, mayo, garlic powder, onion powder, and black pepper. Mix until well blended.
- Add the thawed, drained spinach to the bowl and stir until evenly combined.
- Flour your countertop lightly and roll out the puff pastry sheet. Spread the spinach mixture over the pastry, leaving one long side clear.
- Roll the pastry tightly towards the clear edge, then wrap in plastic wrap and chill in the fridge for about 30 minutes.
- Preheat the oven to 400°F. Slice the log into half-inch rounds and place on a baking sheet lined with parchment paper.
- Beat the egg with a splash of water and brush it over the pinwheels.
- Bake for 15 to 20 minutes, or until puffed and golden brown.
Notes
Make sure to squeeze out excess moisture from the spinach for the best texture. You can store leftovers in an airtight container in the fridge for 3 to 4 days.
