Ingredients

  • 3 oz cream cheese, softened
  • 1 cup almond milk
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup old fashioned oats
  • 1 tbsp chia seeds
  • 1/2 cup strawberries, diced
  • Pinch of salt
  • 1/2 cup strawberries, chopped (for reduction)
  • 1 tbsp pure maple syrup (for reduction)

Instructions

  1. In a bowl, whisk together softened cream cheese, Greek yogurt, almond milk, maple syrup, and vanilla extract until smooth.
  2. Add oats, chia seeds, and a pinch of salt; stir until well combined.
  3. Gently fold in diced strawberries.
  4. Transfer mixture to an airtight container and refrigerate overnight.
  5. In the morning, simmer chopped strawberries and maple syrup over medium heat until softened and reduced to a glossy sauce.
  6. Serve the overnight oats chilled, topping with the strawberry reduction and additional strawberries if desired.

Notes

For a dairy-free version, substitute Greek yogurt and cream cheese with coconut yogurt and vegan cream cheese. Adjust sweetness based on berry ripeness.
