- Pinch of salt
- 1/2 cup strawberries, chopped (for reduction)
- 1 tbsp pure maple syrup (for reduction)
Instructions
- In a bowl, whisk together softened cream cheese, Greek yogurt, almond milk, maple syrup, and vanilla extract until smooth.
- Add oats, chia seeds, and a pinch of salt; stir until well combined.
- Gently fold in diced strawberries.
- Transfer mixture to an airtight container and refrigerate overnight.
- In the morning, simmer chopped strawberries and maple syrup over medium heat until softened and reduced to a glossy sauce.
- Serve the overnight oats chilled, topping with the strawberry reduction and additional strawberries if desired.
Notes
For a dairy-free version, substitute Greek yogurt and cream cheese with coconut yogurt and vegan cream cheese. Adjust sweetness based on berry ripeness.
