Description

A quick and easy dessert that combines a boxed cake mix with fresh strawberries and a light cream icing for a delightful treat.


Ingredients

  • 1 box yellow cake mix
  • 4 large eggs
  • 3/4 cup vegetable oil
  • 1 cup sour cream
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup chopped strawberries
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. Mix the cake mix, eggs, oil, and sour cream in a large bowl until smooth.
  3. In a separate bowl, stir together the brown sugar, cinnamon, and chopped strawberries.
  4. Pour half the batter into the pan and sprinkle half the strawberry mix over it.
  5. Add the rest of the batter and top with the remaining strawberry mix.
  6. Use a knife to swirl the batter and fruit mix together.
  7. Bake for 35–40 minutes until a toothpick comes out clean.
  8. While the cake bakes, whisk powdered sugar and heavy cream to make the icing.
  9. Let the cake cool slightly before icing it.
  10. Drizzle the icing over the cooled cake and let it set before serving.

Notes

For best results, use room temperature eggs and pat strawberries dry before adding to the mixture. You can also customize the recipe with various fruits or nuts.
