- 1/2 cup Unsalted Butter, room temperature
- 1 cup Greek Yogurt
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Kosher Salt
- 2 large Eggs, room temperature
- 1 teaspoon Ground Cinnamon (for topping)
- 1/4 cup White Sugar (for topping)
- 1 cup Powdered Sugar (for glaze)
- 2-4 tablespoons Milk (for glaze)
- 1 teaspoon Vanilla Extract
Instructions
- Mix dry ingredients first so the leaveners spread evenly.
- Cream butter with sugars to get a light mix; this gives lift.
- Add eggs one at a time so the batter stays smooth.
- Fold in yogurt and vanilla gently to avoid overmixing.
- Toss apples with cinnamon and cornstarch so they do not sink.
- Bake until a toothpick comes out mostly clean.
- Let cool slightly, then glaze so the glaze holds but does not run off.
Notes
Use tart apples for best results and ensure not to overmix the batter.
