Description

A delicious weeknight meal featuring baked chicken with a sweet and spicy glaze, paired with creamy macaroni and cheese.


Ingredients

  • 4 chicken thighs
  • 1/4 cup honey
  • 1 tablespoon black pepper
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 cups macaroni
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 cup bread crumbs


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix honey, soy sauce, minced garlic, and ginger to make the marinade.
  3. Coat chicken thighs in the marinade and let sit for at least 30 minutes.
  4. Bake chicken for 25-30 minutes, until fully cooked.
  5. Cook macaroni according to package instructions.
  6. In a saucepan, melt butter, add flour to make a roux, and gradually whisk in milk until thickened.
  7. Stir in cheese until melted and combined.
  8. Combine macaroni with cheese sauce and top with bread crumbs.
  9. Bake macaroni for 15-20 minutes until golden.
  10. Serve chicken over macaroni and cheese.

Notes

Marinating for 30 minutes gives more flavor but you can do 10 minutes in a pinch. Bake chicken until the juices run clear. The roux must cook a minute before milk so the sauce is smooth. Let the mac rest a few minutes before topping to avoid a soggy crust.
