Ingredients

- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 small corn tortillas
- 1 can corn (drained, optional)
- 1 can diced tomatoes (optional)
- Sour cream and chopped green onions for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef or turkey in a skillet over medium heat until browned. Drain any excess fat.
- Stir in the taco seasoning and salsa, and cook for another 2-3 minutes.
- Layer the tortillas, taco meat mixture, and cheese in a baking dish. Repeat the layers until all ingredients are used, finishing with cheese on top.
- If using, add corn or diced tomatoes in between layers.
- Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.
- Serve warm with sour cream and green onions if desired.
Notes
Preheat the oven for even cooking. Drain excess fat to prevent a watery dish. Let the casserole rest before slicing for best results.
