Description

A quick and easy no-cook breakfast made with rolled oats, grated carrot, and spices, perfect for busy mornings.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or dairy-free milk)
  • 1 medium carrot, grated
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon maple syrup or honey
  • 1/4 cup Greek yogurt (or dairy-free yogurt)
  • 1/4 cup raisins or chopped walnuts (optional)
  • 1 teaspoon vanilla extract


Instructions

  1. In a bowl or jar, combine the rolled oats and milk.
  2. Add grated carrot, cinnamon, nutmeg, maple syrup, yogurt, raisins or walnuts, and vanilla extract.
  3. Stir until evenly mixed and no large clumps of yogurt remain.
  4. Cover and refrigerate overnight.
  5. In the morning, give it a good stir and enjoy your delicious carrot cake overnight oats!

Notes

For best results, let the oats rest for at least 6 hours. Adjust creaminess by adding milk as needed.
