Description

A cozy and comforting tomato soup made with fresh tomatoes, perfect for busy weeknights.


Ingredients

Scale
  • 3 pounds ripe tomatoes, cored and quartered
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 4 cups vegetable or chicken broth
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon sugar (optional)
  • Basil, for garnish
  • Milk or cream (optional, for creaminess)

Instructions

  1. Prep the tomatoes by coring and quartering them.
  2. In a pot, heat olive oil or butter over medium heat and sweat the chopped onion until tender.
  3. Add minced garlic and sauté for another minute.
  4. Add the quartered tomatoes, broth, salt, black pepper, and sugar, if necessary.
  5. Simmer for 20 minutes until the tomatoes soften.
  6. Blend the soup using an immersion blender or regular blender until smooth.
  7. Stir in butter or cream, if desired, for added richness.
  8. Serve hot, garnished with basil.

Notes

This soup can be frozen for up to 3 months. For a creamy variation, blend in a boiled potato or soaked cashews.
