Ingredients

- 3 pounds ripe tomatoes, cored and quartered
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil or butter
- 4 cups vegetable or chicken broth
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon sugar (optional)
- Basil, for garnish
- Milk or cream (optional, for creaminess)
Instructions
- Prep the tomatoes by coring and quartering them.
- In a pot, heat olive oil or butter over medium heat and sweat the chopped onion until tender.
- Add minced garlic and sauté for another minute.
- Add the quartered tomatoes, broth, salt, black pepper, and sugar, if necessary.
- Simmer for 20 minutes until the tomatoes soften.
- Blend the soup using an immersion blender or regular blender until smooth.
- Stir in butter or cream, if desired, for added richness.
- Serve hot, garnished with basil.
Notes
This soup can be frozen for up to 3 months. For a creamy variation, blend in a boiled potato or soaked cashews.
