A comforting and indulgent dumpling bake made with frozen dumplings baked in a creamy coconut-curry sauce, perfect for busy nights.

- 1 (13.5-ounce) can coconut milk
- ½ bottle Trader Joe’s Thai Red Curry Sauce
- 3 tablespoons Trader Joe’s Soyaki sauce
- 3 cloves garlic, minced
- A large handful of fresh spinach (optional)
- 1 bag frozen chicken dumplings (or your preferred dumpling variety)
- Chili oil crunch or Trader Joe’s Crunchy Chili Onion, for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a baking dish, pour the coconut milk, followed by the Thai red curry sauce and Soyaki. Add the minced garlic and whisk everything until smooth.
- Scatter the spinach evenly over the sauce.
- Place the frozen dumplings directly on top, keeping them in one layer.
- Cover the dish tightly with foil and bake for 35-40 minutes, until heated through.
- Remove the foil and let rest for a minute. Spoon chili oil crunch over the top and serve immediately over steamed rice.
Notes
Keep dumplings frozen until baking for better texture. Cover tightly to ensure steam cooking. For extra sauce, add more coconut milk before baking.
