Ingredients

  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Melt the butter over medium heat in a skillet.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sun-dried tomatoes and cook for another minute.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Stir in the butter beans and spinach, cooking until the spinach is wilted.
