Description

A simple and reliable cucumber-yogurt sauce that serves as a perfect condiment or dip, ideal for grilled meats or fresh vegetables.

Ingredients

Scale
  • 1 cup Greek yogurt (full-fat or low-fat)
  • 1 medium cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped (or mint)
  • Salt and pepper to taste

Instructions

  1. Grate the cucumber using the coarse side of a grater.
  2. Squeeze out as much liquid as possible from the grated cucumber using your hands or a cheesecloth.
  3. Combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and fresh dill in a medium bowl.
  4. Season with salt and pepper to taste.
  5. Stir until fully combined.
  6. Chill in the refrigerator for at least 30 minutes for the flavors to meld.
  7. Serve cold, garnished with a drizzle of olive oil and extra dill if desired.

Notes

Remove as much cucumber liquid as possible to keep the sauce thick. Use fresh lemon juice for brighter flavor. For a crunchier side, serve with crisp vegetables or toasted pita.
