Ingredients

- 1 bunch of kale, chopped
- 1 cup of chickpeas, cooked or canned
- 1/2 cup of vegan Caesar dressing
- 1/4 cup of nutritional yeast
- 1/4 cup of lemon juice
- Salt and pepper to taste
- Croutons for topping
Instructions
- In a large mixing bowl, combine the chopped kale with the fresh lemon juice. Gently massage the kale with your hands to tenderize the leaves for a couple of minutes.
- Add the chickpeas and pour in the vegan Caesar dressing. Toss everything together until the kale is well-coated.
- Sprinkle the nutritional yeast, salt, and pepper over your salad. Mix thoroughly to integrate the flavors.
- Top with crispy croutons before serving and enjoy.
