- 1/2 cup brown sugar
- 1/4 cup coconut oil or vegan butter
- 1/4 cup maple syrup
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup walnuts or pecans (optional)
- 1/4 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the grated carrots, brown sugar, and melted coconut oil in a large mixing bowl.
- Stir in the maple syrup until well mixed.
- Whisk together the flour, baking soda, baking powder, cinnamon, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the walnuts and raisins if using.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Make sure carrots are not too wet and dough holds shape. Bake until edges are golden for the best texture.
