Ingredients

- 2 cups winter melon, peeled and diced
- 1 cup bell peppers, sliced
- 1 cup bell pepper, julienned
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Stir in the diced winter melon, cooking for about 5 minutes until it begins to soften.
- Add the sliced bell peppers and continue to stir-fry for another 3-4 minutes.
- Pour in the soy sauce, and season with salt and pepper, then cook for an additional 2 minutes.
- Serve hot as a side or over rice for a complete meal.
Notes
You can add your choice of protein such as tofu or chicken for a heartier meal.
