Description

A delightful stir-fry featuring tender winter melon and vibrant vegetables, perfect for a quick and healthy meal.


Ingredients

Scale
  • 2 cups winter melon, peeled and diced
  • 1 cup bell peppers, sliced
  • 1 cup bell pepper, julienned
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Stir in the diced winter melon, cooking for about 5 minutes until it begins to soften.
  4. Add the sliced bell peppers and continue to stir-fry for another 3-4 minutes.
  5. Pour in the soy sauce, and season with salt and pepper, then cook for an additional 2 minutes.
  6. Serve hot as a side or over rice for a complete meal.

Notes

You can add your choice of protein such as tofu or chicken for a heartier meal.
