Description

A delightful low-carb bread that’s easy to make, with a golden crust and soft interior, perfect for a low-carb lifestyle.

Ingredients

Scale
  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • 1 tablespoon baking powder (aluminum-free preferred)
  • ¼ cup melted butter or coconut oil
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • Optional: ½ cup finely ground almond flour

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. In a large bowl, whisk together the eggs, Greek yogurt, and melted butter (or coconut oil) until smooth and creamy.
  3. Add the baking powder, salt, and xanthan gum (or psyllium husk powder). If using almond flour, stir it in now.
  4. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for about 35–45 minutes, or until a toothpick comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store leftovers wrapped tightly in plastic wrap or in an airtight container in the refrigerator for up to a week. Freeze slices for longer storage.
