Description
A comforting dish that wraps seasoned chicken in flaky puff pastry and is topped with a creamy Parmesan sauce.

- 2 boneless, skinless chicken breasts (about 6 oz each)
- 2 sheets puff pastry, thawed
- 4 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- 1 beaten egg
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Cut each chicken breast horizontally to create two thinner cutlets. Season the chicken with salt, pepper, and Italian herbs.
- Roll out each puff pastry sheet slightly and cut each sheet into two squares. Place one chicken cutlet in the center of each square.
- In a small bowl, combine the cream cheese, Parmesan cheese, heavy cream, and minced garlic. Spoon the cream cheese mixture evenly over the chicken cutlets.
- Fold the puff pastry over the chicken and cream cheese mixture to create a ‘pillow.’ Crimp the edges with a fork to seal. Brush the tops of the pillows with the beaten egg.
- Place the chicken pillows on the prepared baking sheet and bake for 20-25 minutes, or until the puff pastry is golden brown and the chicken is cooked through. Let cool slightly before serving.
Notes
Use thinner cutlets for even cooking. Ensure to seal edges well to avoid leaks. If the pastry browns too fast, lower oven temperature by 25°F and bake longer.
