Instructions
- Prepare Filling: In a bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Assemble Sandwiches: Spread the cream cheese filling between two slices of bread to form a sandwich.
- Whisk Egg Mixture: In a separate bowl, whisk eggs and milk together until blended.
- Coat Sandwiches: Dip each sandwich into the egg mixture, letting excess drip off, then press both sides into shredded coconut.
- Cook: Melt butter in a skillet over medium heat. Fry each sandwich for 3–4 minutes per side, or until golden brown and crisp.
